Blondies with Sea Salt (GF)
1 can (15 oz) chickpeas, rinsed and drained
1 egg, organic
1/2 cup all natural nut butter, your choice
1/3 cup pure maple syrup or honey
2 tsp vanilla
1/2 tsp salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup dark chocolate chips
1/2 tbs sea salt, for crust
1. Preheat oven to 350F and spray 8×8 inch pan with nonstick baking/cooking spray.
2. In a food processor, add all ingredients except chocolate chips and process until batter is smooth. Stir in chocolate chips. Spread batter evenly in prepared pan. Bake for 20-25 minutes or until toothpick comes out clean and edges are a little brown. It will look underdone, but don’t worry about it.
3. Sprinkle with sea salt over entire pan, make sure its even then cool for 20 minutes on a wire rack then cut into squares.
Makes 16-18 blondies.
