Watermelon CANDY- Yes CANDY!!
No, I’m not a genius but after you taste this, you will think I am. Well… I may be a Watermelon Jerky Genius.
You can do this in a dehydrator or an oven. Start by cutting the watermelon in half, depending on size. It makes it more manageable. First cut off the rind, as much of it as you can. Then cut watermelon into 1/4 - 1/2 inch thick slices. I have a LARGE dehydrator. Make it fit yours. I have 4 racks in mine and left two plain and sprinkled cayenne pepper on the other two.
Lastly, turn on your machine , 135 degrees on mine and leave it on for 24 hours. In an oven; turn heat to 140F for about 15-20 hours. If you would like to buy one and you should Amazon has a great selection. I do covet the Excaliber 3926TB Food Dehydrator.
Don’t test, taste or even look at it. LEAVE IT ALONE!! When it’s done, remove it from the machine (otherwise, you will never get the watermelon off your racks), let it cook to room temp and store it in an airtight container.
