Ingredients
- 1lb whole wheat pasta
- 1/4 cup lemon juice
- 1 tsp lemon peel
- 1/4 cup parmesan cheese
- 3 tbsp avocado
- 3 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1 pint grape tomatoes, halved
- 1 zucchini, chopped
- 1 cup frozen peas
- 1 cup cooked chicken, sliced
- 1/4 cup basil leaves, chopped
Instructions
- Heat a large pot with salted water to a high boil
- Pour lemon, peel and squeeze juice into large bowl.
- Whisk in Parmesan, avocado, oil, garlic, pepper, and salt.
- Add tomatoes, zucchini, peas, basil, and cooked pasta; toss well.
- Top with cheese and basil.
