Ingredients
- 2 tsp. extra-virgin olive extra-virgin olive oil
- 2 cup quinoa
- 3 Tbsp. fresh lemon fresh lemon juice
- 2 1/2 cups reduced-sodium chicken reduced-sodium chicken broth
- 1/2 tsp. salt, plus more to taste
- 1 cup chopped apricots
Instructions
- In a medium saucepan, heat oil over medium heat.
- Add quinoa and cook until lightly toasted, 3 to 4 minutes.
- Stir in chicken broth and salt.
- Bring to a boil; reduce heat to low, cover and cook 15 minutes, or until broth is absorbed and quinoa is tender.
- Remove from heat and fluff with a fork.
- Let cool slightly and stir in apricots and lemon juice.
- Adjust seasoning to taste.
- Serve warm or at room temperature
