My oldest son and I have tried every GF bakery in NYC searching for the ultimate blondie. This recipe is what I cooked up after too many disappointments.

Ingredients
- 1/2 cup garbanzo flour
- 1/2 cup brown rice flour
- 1/2 cup GF baking flour
- 1/4 cup arrowroot starch
- 1-1/4 cups coconut sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp xanthan gum
- 1 tsp salt
- 1/2 cup coconut oil
- 1/3 cup applesauce
- 2 tbsp v anilla
- 1/2 cup boiling water
- 1 cup Chocolate Chips
Instructions
- Preheat the oven to 325°F. Lightly grease three 12-mini-muffin tins* with oil.
- In a medium bowl, whisk together the flours, starchs, sugar, baking powder, baking soda, xanthan gum and salt. Add oil, applesauce, vanilla and hot water and stir until. Gently fold in chocolate chips. Pout batter into greased 9x9 or 8x8 pan, bake for 9-11 minutes. Can be kept for 3 days in an air-tight container.
